Quick Strawberry Biscuits

Okay, so it's off season, but I am craving some berries with my hot chocolate this morning, and this is the simplest breakfast sweet roll I know...

Strawberry Jam (your own, mine or a friends' is best!)
1 tin refrigerator biscuits

Preheat oven according to directions on biscuits. Grease a standard sized muffin pan. Spoon 1 TBSP strawberry jam into the bottom of each muffin cup. Top with a refrigerator biscuit and bake as directed. Serve piping hot.

Classic Deviled Eggs

Eggs are always in season, and make the perfect appetizer for events or just a snack for yourself! Great with chicken and duck eggs!

6 hard-cooked eggs, peeled and cut lengthwise
¼ cup Light Mayonnaise or Salad Dressing
½ teaspoon dry ground mustard
½ teaspoon white vinegar
1/8 teaspoon salt 
¼ teaspoon ground black pepper 
Paprika for garnish

Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add mayonnaise, mustard powder, vinegar, salt and pepper and mix thoroughly. Fill the empty egg white shells with the mixture and sprinkle lightly with paprika.

Cover lightly with plastic wrap and refrigerate for up to one day before serving.

  • Smoked Sausage Fritatta

  • Makes a delicious breakfast for your family, and helps use up some eggs!!

  • 1 1/2 cups smoked sausage, sliced
  • 1/4 cup diced onion
  • 6 eggs
  • 1/2 cup milk
  • 1/4 cup sour cream
  • salt and pepper to taste
  • 1 1/2 cups shredded Cheddar cheese, divided

  • Preheat an oven to 400 degrees F (200 degrees C). Cook the sausage and onion in an oven-proof skillet over medium heat until the sausage has browned, about 10 minutes. Drain excess grease from the skillet. Whisk together the eggs, milk, sour cream, salt, and pepper. Sprinkle the sausage with 1 cup of the Cheddar cheese, then pour the egg mixture over-top. Bake in the preheated oven until a knife inserted into the center comes out clean, about 18 minutes. Sprinkle with the remaining Cheddar cheese, and return to the oven until the cheese has melted. Cut into wedges to serve.
